Garlic Broccoli Salad

Garlic Broccoli Salad*

Suggested Garlic Variety: Red Toch 

Ingredients:

2 bunches broccoli, tough part of stems removed

6 cloves garlic, minced 

1/4 cup olive oil

4 scallions, chopped

1 tsp fresh rosemary, chopped

1/4 cup wine vinegar

Steps:

  1. Cut broccoli into 2-inch pieces. Steam broccoli until just tender. Drain and cool.

  2. In a separate bowl, mix garlic, scallions, olive oil, rosemary & salt.

  3. Add vinegar and whisk together.

  4. Pour mixture over broccoli. 

  5. Serve at room temperature or refrigerate for one hour and serve chilled.

Hint:

Do not over toss this salad or the broccoli pieces will fall apart.
