Simple Italian Salad

Suggested Garlic Variety: Lorz Italian or Aglio Blanco

This is one of our test recipes. We’ve found that Georgian Crystal, Red Toch, Khabar, and Burgundy are all really good - each cultivar brings a little something different to the party!  

Ingredients:

1 large head of romaine or 6 cups mixed greens, rinsed, dried, & torn or chopped

1/2 medium red onion (or whatever you have), thinly sliced

1 - 2 garden fresh tomatoes cut into quarters (heirloom is best)

2 medium sized cloves of garlic, minced

3 oz. good olive oil

1 oz. balsamic or wine vinegar (red or white)

1/2 tsp. kosher salt or sea salt

2 Tbl fresh oregano finely chopped or 1 Tbl dried oregano

1/4 tsp. black pepper

additional salt & pepper to taste

Steps:

  1. Put greens and onion in a large bowl. 

  2. Sprinkle minced garlic, oregano, salt and pepper over the top of the greens.

  3. Pour olive oil over the salad while moving your hand back and forth to ensure it is spread around.

  4. Pour vinegar over the salad while moving your hand back and forth to ensure it is spread around.

  5. Toss the salad. Toss it some more. Continue tossing the salad.

  6. Toss the salad. Taste. Adjust seasonings. Repeat step 6. 

  7. Serve when thoroughly mixed.

Hint:

A good rule of thumb is a 3:1 ratio of olive oil to vinegar. It can vary depending of the qualities of the olive oil and vinegar used. A salad should not be floating in oil and vinegar but it should be well dressed - each ingredient should be coated.
