Apple Garlic Jalapeño Relish

Ingredients:

Suggested Garlic Variety: Khabar (fresh or rehydrated chips)

5 cups apples, peeled & chopped

5 cloves garlic, finely minced or 30 grams dehydrated chips (rehydrated)

1/2 cup apple cider vinegar
2 cups sugar
1 1/2 jalapeños, finely chopped
1 tsp fresh ginger, finely minced or grated
1/2 cup sweet red pepper, diced small
1/4 cup fresh parsley, stems removed, finely chopped Salt & Pepper
Pectin (optional) up to 2 tsp liquid or 3/4 tsp dry.

Steps:

  1. Place all ingredients in a heavy saucepan. Cook over medium heat, stirring frequently, for 30-40 minutes or until the apples have started to break down & the mixture has begun to thicken. If the apple sliced were a bit bigger, but have begun to break down, use an immersion blender to achieve a semi-chunky texture.

  2. Taste & adjust salt & pepper as needed.

  3. If using pectin, add to apple mixture and, stirring constantly, bring to a boil for 3-4 minutes.

Hint:

Do not overcook or you will end up with candy.
If you are comfortable canning this, go for it. You should get 2-3 pints.
